Potato, Pepper & Halloumi Bake

 

I picked up some halloumi today when I went shopping – I couldn’t walk past it – it was almost like it was calling to me.  And so tonight we’re having this yummy bake.

The recipe is vegetarian, but if you’re feeling carnivorous it goes really well as an accompaniment to some grilled chicken or fish.

Preparation time:  10 minutes
Cooking time: 1 hr 20 minutes
Serves:  4

Ingredients

    • 3 medium potatoes, washed & cut into bite sized chunks
    • 3 peppers (any colours you please), cut into rings
    • 3 sweet potatoes, washed & sliced
    • 3 garlic cloves, thinly sliced
    • 1 large or 2 medium onions, cut into rings or slices,
    • 250g (usually 1 pack) halloumi cheese, sliced
    • olive oil
    • salt & pepper to season

      Preparation method

      1. Preheat the over to gas mark 4.
      2. Put the potatoes in a large ovenproof dish.
      3. Add a layer of sweet potatoes & pepper rings, followed by a layer of onion & garlic.  Season the layers with a drizzle of olive oil, salt & pepper.  Repeat layering until the ingredients are used up.
      4. Bake for around 45 minutes, or until browned.
      5. Remove the dish from the oven, place the slices of halloumi on top and return to the oven for around ? minutes until the cheese is melted & bubbling.
      6. Serve!
